Chef Select Members Field Trip 2009
1st year students undertaking training in the workplace have been rewarded for their hard work with an industry field trip to the Hunter Valley and Newcastle restaurants.
Chef select apprentices were given a cooking demonstration by Chef Troy Rhodes Brown at the MUSE restaurant, before moving on to The Wine House & Kitchen with chef Guy Parkinson. Next was Binnorie Feta for a demonstration on producing curds and explanations of different cheese production methods, then onto SILO atHoneysuckle with Chef David Cartwright for a discussion of restaurant operations and future career tips in the hospitality field.
What is Chef Select
Chef Select is a joint trial between TAFE & DEEWR where students after completing a module at TAFE apply and can undertake training at their own restaurant. A portfolio of evidence is created on the job, alongside assignments and exam preparation, where the apprentice will come in for the practical and theory tests at TAFE. The success so far has been varied, with some establishments enjoying the on job training and associated training paperwork, whilst others have found the demands of on job training too intensive and burdensome.
For these Chef Select and HTN apprentices who have completed their first round of assignments, portfolios and testing, this industry experience will assist in gaining a different range of skills and appreciation for their cookery career, and reward them for their hard work. A special thankyou to all restaurants, producers and staff who volunteered their time to help these 1st year apprentices.
